Leeks add so much to so many dishes and yet when do we thank them? Never. Here they are again, over-performing.
What I love about techniques like this is that something as everyday (as barely even noticeable) as a leek, can be transformed. It’s hard to be inspired when you see the rigid sticks bagged up in the supermarket and yet when they’re given just the tiniest bit of attention… well.
‘Burnt leek’ sounds cheffy but it’s just cooking leeks in the oven until they’re soft and lightly charred. There’s no BBQ involved - unless you fancy that of course - but you’ll end up with a much stronger, aggressively smoky flavour.
