I love asparagus for breakfast. Is that weird? I find it odd that we eat specifically fruit and not veg with our carbs in the morning. I’m a big fan (huge!) of an ultra-simple tomato salad first thing during summer (I'm talking just a drizzle of olive oil and salt), and I do love asparagus with eggs.
I wanted to share some of my favourite ways to eat it this week, and I hope you find them pleasing too. Maybe even for breakfast?
